Our Destiny and Louise went to the Bristol Viva Vegan Christmas Market this weekend, and did they nail it? Yes they did!
Take a look at the amazing cakes the ladies took with them... and consequently sold to many, many hungry vegans! Everything from stewed plum cupcakes to gluten free gin and lemon cake, mince pie shortbread to a boozy Christmas cake - we had it all.
If you see anything you like here, we'd be happy to bake anything for you again if you couldn't make the event - just contact us!
That was our final event for 2018, but we are starting to book on events for next year, so stay tuned for more information!

Our Louise went to Switzerland this time last week and here are some of the great photos of Swiss cakes she sent us. Way to make us jealous...!
Swiss cakes are always a delight to look at... and to taste of course! I am need of a serious diet after all the goodies El Husbandio and I enjoyed on our short break in Switzerland this month - we just couldn't resist some 'market research'! Take a look at some of the festive treats we found around Bern, Zurich, and surrounding alpine villages. Which would you choose?

Christmas has begun here at 280 Bakes: Halloween is over, the clocks have gone back, and it's November! Let's see what's in store this season at your local home bakery...
As usual, Christmas cake will be available to order. Vegan and gluten free varieties are available, and our Early Bird Discount runs throughout November. Save by being organised, that's what we say! We'll deliver any date up until 23rd December - our bakers have Christmas Eve, Christmas Day and Boxing Day off - so let us take the strain off you preparing your family do.
Some folks prefer their Christmas bakes with no fondant, a smaller bite - our Christmas cupcakes are perfect for this ask! Ideal for Christmas office parties, a gift for your host, or for the kids' lunchboxes on the last day of term... Order now to get in on the Early Bird Discount!

At 280 Bakes, we love networking and supporting other small businesses in Bristol. Today we've invited #FabFudge, a small business raising money for a personal cause, to guest on our blog.

Hi, my name is Jill Marriner. I would like to introduce you to our company, #FabFudge - a small, family-run business based in Hartcliffe, South Bristol creating small batch artisan fudge, including our ever-growing popular range of Vegan fudges.
I have suffered from Multiple Sclerosis for over 15 years and am fundraising over $50,000 for stem cell replacement treatment (HSCT) in Moscow, as the procedure isn't yet fully available in the UK. Once the target has been reached – we're currently still £12000 short – we will be donating to AIMS (Auto Immune & Multiple Sclerosis), the only HSCT support charity in the UK, to help others during their journeys toward HSCT.
The idea of #FabFudge started in 2016 when I started making fudge for family and friends, receiving lots of brilliant feedback. Many said the fudge was 'amazing' and that I should make it into a business to help with my fundraising. With the help of my husband, Tim (creative director and vegan fudge craftsman), and my son Josh, who runs the #FabFudge website and social media (among many duties!), we set to work trialing different recipes, selling at local markets.
We now have a range of 40 flavours of fudge (plus winter boozy fudges & fudge Easter eggs!), including over 10 flavours of vegan fudge. We developed this secret recipe over a year, perfecting it slowly, ensuring a beautifully creamy texture. It has become a massive hit within the vegan community.
Below are some photos of our vegan Oreo fudge, the chocolate orange variety, and on the right, our strawberry cream fudge. Yum!
We have regular sellout pitches at several local markets; regulars always know when we'll be back to supply their fudgy fix! We also sell online to individuals & independent vegan businesses, both in the UK and internationally.
Our business is still home based, but is expanding rapidly and we hope to relocate in due course to a larger, dedicated facility (to save my husband constantly extending the house down the garden). Being a relatively small enterprise hasn't, however, stopped us from already fulfilling some very large wholesale orders!

This is an irresistible recipe for Gingerbread, one that made me actually like ginger flavours... because my favourite spirit is in the ingredients!
Give it a try and you won't look back!
200g golden syrup
125g dark brown sugar
2 tsp fresh ginger (optional, if you want extra flavour)
1 tsp ground ginger
2 tsp cinnamon
1/4 tsp ground cloves (optional - ick!)
1 orange (zest and juice)
1 tsp bicarbonate of soda
300g plain flour
Icing sugar to dust
To begin with, preheat your oven to 170ºC and grease a 30×20 cm tray.
Start by making the liquid components – get a medium sized saucepan and put it on a medium heat on the hob. To the pan add your butter, sugar, golden syrup, treacle, and the fresh ginger. Heat the pan gently, allowing everything to melt slowly. Stir occasionally with a metal spoon.
Whilst that’s melting sift the dry ingredients into a bowl – that’s the plain flour and the ground spices – ensuring that there are no lumps, then gently combine. Zest the orange in on top of this.
Crack the eggs into a jug then whisk them together before adding the milk and the amaretto. Whisk until smooth.
One the syrup/butter mixture has melted, take it off the heat and add in the milk mixture (stirring constantly) and then finally the orange juice. Pout half into the dry ingredients and mix it in before adding the other half. The mixture will be very wet and runny, don’t worry, it’s meant to be.
Pour into your greased tray and put in the centre of the oven to bake. It should take between 45 and 55 minutes, depending on your oven. Cool and dust.
